Kale - 500g

Kale is high in betacarotene, vitamin C, phosphorous, sulphur, iron, potassium, calcium and folic acid as well!

Cooking it is a case of less is more. Give it a really good wash and cook in a little boiling salted water for 3-4 minutes with the lid off. Drain well and stir in a knob of butter and plenty of salt and pepper. It can also be used in stir fries, with pasta and in risotto. Try it steamed with grated ginger and finely sliced chillis.

If you find it bitter, add a little sugar to the water when cooking. It makes the very best bubble and squeak as it holds its flavour and texture when cooked.

Kale goes well with partridge, pheasant, guinea fowl and duck. Its also great in minestrone soup and hearty stews.
